Ingredients
  

  • 1 pound 93% lean ground turkey
  • 1 medium onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 garlic cloves minced
  • 5 cups chopped green cabbage
  • 1 can diced tomatoes 14 ounces
  • 5 cups low-sodium chicken broth
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp red wine vinegar or lemon juice

Method
 

  1. Place the ground turkey in a large pot over medium heat and cook for 5 to 7 minutes, breaking it into small pieces.
  2. Add the onion, carrots, and celery, then continue cooking for another 5 minutes until the vegetables begin to soften.
  3. Stir in the garlic and cook for 30 seconds before adding the chopped cabbage.
  4. Pour in the diced tomatoes and chicken broth, then season with Italian seasoning, paprika, salt, and black pepper.
  5. Bring the soup to a boil, reduce the heat, and simmer uncovered for about 20 minutes until the cabbage is tender.
  6. Stir in the red wine vinegar or lemon juice to brighten the broth.
