Tomatillo Red Chili Salsa

Tomatillos and dried red chilies create a bold salsa with roasted flavor and noticeable heat. A small spoonful brings plenty of character to any meal.

Ingredients
  

  • 1 pound tomatillos, husked and rinsed
  • 4 dried chile de árbol peppers
  • 2 dried guajillo peppers
  • 2 garlic cloves
  • ¼ medium white onion
  • ½ tsp ground cumin
  • 2 tbsp fresh lime juice
  • ¾ tsp salt
  • ½ cup water

Method
 

  1. Remove the stems from the dried chilies and shake out some of the seeds if a milder salsa is preferred.
  2. Toast the chilies in a dry skillet for 20 to 30 seconds per side, then soak them in hot water.
  3. Simmer the tomatillos, onion, and garlic in water for about 8 minutes until softened.
  4. Drain the vegetables and chilies, reserving some of the cooking liquid for adjusting the salsa.
  5. Blend the tomatillos, chilies, onion, garlic, cumin, lime juice, salt, and ½ cup water until smooth.
  6. Add more reserved liquid if needed, cool the salsa completely, and adjust the salt or lime before serving.
