Ingredients
  

  • 4 large red bell peppers
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 1 can diced tomatoes 14 ounces
  • 3 cups low-sodium vegetable broth
  • ½ tsp smoked paprika
  • ½ tsp dried basil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup low-fat milk
  • 1 tbsp balsamic vinegar optional

Method
 

  1. Preheat the oven to 425°F or 220°C, cut the peppers in half, and remove the stems, seeds, and membranes.
  2. Arrange the peppers cut-side down on a lined baking sheet and roast for 20 to 25 minutes until soft and lightly charred.
  3. Heat the olive oil in a large pot, add the onion, and cook for about 4 minutes before stirring in the garlic.
  4. Add the roasted peppers, tomatoes, vegetable broth, smoked paprika, basil, salt, and black pepper.
  5. Bring the soup to a gentle boil, reduce the heat, and simmer for 12 to 15 minutes.
  6. Blend the mixture carefully until it becomes smooth and velvety.
  7. Stir in the low-fat milk and balsamic vinegar, then warm the soup gently without boiling.
