Light Vegetable Minestrone

This light minestrone is filled with vegetables, beans, tomatoes, and a small amount of pasta. It is flexible, colorful, and ideal for using ingredients already in my kitchen.

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 garlic cloves minced
  • 1 medium zucchini diced
  • 1 cup chopped green beans
  • 1 can kidney beans, 15 ounces, drained and rinsed
  • 1 can diced tomatoes 14 ounces
  • 6 cups low-sodium vegetable broth
  • ¾ cup small dry pasta
  • 3 cups fresh spinach
  • 1 tsp Italian seasoning
  • ½ tsp salt

Method
 

  1. Heat the olive oil in a large pot, then cook the onion, carrots, and celery for about 5 minutes.
  2. Add the garlic, zucchini, and green beans, and continue cooking for another 3 minutes.
  3. Stir in the kidney beans, tomatoes, broth, Italian seasoning, salt, and black pepper.
  4. Bring the soup to a boil, add the pasta, and reduce the heat to a steady simmer.
  5. Cook according to the pasta package directions, stirring occasionally so the pieces do not stick.
  6. Add the spinach during the final 2 minutes and cook until the leaves have wilted.
