Chipotle Copycat Chicken

Juicy chicken is marinated with chipotle peppers, lime, garlic, and warm spices. I use it as an easy filling for bowls, tacos, burritos, and salads.

Ingredients
  

  • 2 pounds boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 2 chipotle peppers in adobo sauce
  • 1 tbsp adobo sauce
  • 3 garlic cloves
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • ½ tsp smoked paprika
  • 1 tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh lime juice
  • 2 tbsp water

Method
 

  1. Blend the olive oil, chipotle peppers, adobo sauce, garlic, cumin, oregano, paprika, salt, pepper, lime juice, and water until smooth.
  2. Place the chicken in a bowl or resealable bag, pour the marinade over it, and refrigerate for at least 30 minutes or up to 8 hours.
  3. Remove the chicken from the refrigerator, let it rest at room temperature for 10 minutes, and heat a skillet over medium-high heat.
  4. Cook the chicken for 5 to 7 minutes on the first side, then turn and cook for another 5 to 6 minutes.
  5. Check that the thickest section reaches 165°F or 74°C, then transfer the chicken to a cutting board and rest it for 5 minutes.
  6. Chop the chicken into small pieces and serve it in bowls, tacos, burritos, salads, or quesadillas.
