Chipotle Copycat Black Beans

Black beans simmer with onion, garlic, cumin, oregano, and lime. They are affordable, versatile, and easy to prepare in about 30 minutes.

Ingredients
  

  • 1 tsp olive oil
  • ½ medium onion finely diced
  • 2 garlic cloves minced
  • 2 cans black beans, 15 ounces each drained and rinsed
  • 1 cups low-sodium vegetable broth
  • 1 tsp ground cumin
  • ½ tsp dried oregano
  • 1 bay leaf
  • ¼ tsp chipotle powder
  • ½ tsp salt
  • 1 tbsp fresh lime juice

Method
 

  1. Heat the olive oil in a saucepan, add the diced onion, and cook for 4 to 5 minutes until softened.
  2. Stir in the garlic, cumin, oregano, and optional chipotle powder, then cook for about 30 seconds.
  3. Add the black beans, vegetable broth, bay leaf, and salt, stirring everything together.
  4. Bring the mixture to a gentle boil, reduce the heat, and simmer uncovered for 15 minutes.
  5. Mash a small portion of the beans against the side of the saucepan to thicken the liquid.
  6. Remove the bay leaf, stir in the lime juice, adjust the seasoning, and serve with some of the broth.
