Apple Cinnamon Bread Pudding

Soft bread, cinnamon apples, and vanilla custard bake together in this comforting dessert made for sharing.

Ingredients
  

  • 6 cups day-old bread cubes
  • 2 medium apples, peeled and diced
  • 4 large eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup brown sugar
  • 1 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2 tbsp melted butter
  • 1/3 cup raisins, optional

Method
 

  1. Grease a 9-inch baking dish and place the bread cubes inside. Scatter the diced apples and raisins between the pieces so they are evenly distributed.
  2. In a large bowl, whisk eggs, milk, cream, brown sugar, cinnamon, vanilla, salt, and melted butter until the sugar begins to dissolve.
  3. Pour the custard slowly over the bread. Press the cubes down gently with a spoon so the upper pieces absorb some of the liquid.
  4. Let the mixture rest for 20 minutes while the oven heats to 350°F or 175°C. Press the bread down once more halfway through the resting time.
  5. Bake uncovered for 40 to 48 minutes. The center should look set but still moist, while the top turns golden around the raised edges.
  6. Rest the pudding for 10 minutes before serving. Spoon it into bowls and add caramel, maple syrup, or powdered sugar as desired.
